Some of my favorite days when we lived back home in San Diego were spent at the beach. Is this really a surprise? It's the first thing everyone thinks of when they think of San Diego! The truth is, I didn't realize how special these days really were until I moved 12 hours away from the beach and i'd really love to plant my booty in the sand with the scent of sunscreen and salt all around. Oh and the occasional homeless person...it's all a part of the experience ya'll. :)
After a long day soaking up the sun, my favorite stop was at Rum Jungle Cafe (if you're in San Diego, run don't walk. best.food.ever.) And they have a SPECIALTY of the best Acai Bowls i've ever tasted. We were at my parents over the weekend soaking up the sun at their lake house, and it so reminded me of my favorite little cafe in San Diego and this pregnant lady needed an ACAI BOWL NOW. Since there is basically nowhere to buy such a treat here in little ole' Benton County, I set out to recreate my own, and the good news is, other than the Acai, I already had everything in the pantry, and I bet you do too!
An Acai bowl is basically just a smoothie in a bowl loaded up with toppings and eaten with a spoon. It's packed with good for you nutrition, and makes the most refreshing breakfast or lunch. Or 2nd breakfast like I mentioned on instagram ;)
I added up all the calories in my very large bowl, and it's definitely not a light snack. All in, my entire bowl (which could easily be split between 2 people, this thing is huge) packs about a 500 calorie punch, but you can rest easy knowing that it's full the good kind of calories that keep you going and fuel you throughout your day. So let's make our own!
You will need:
- Frozen Acai Packs (can be picked up at almost any health food store)
- Mixed Frozen Fruit
- A Banana
- Milk- we're a strictly regular dairy milk family. Please feel free to substitute with non-dairy milk of your choice!
- Flax Seed Meal (optional, lots of fiber)
- Chia Seeds (optional, protein and fiber)
Add all of your ingredients into a high powered blender. We have a Ninja and it works great for this, however, if your blender is having trouble, just add a little extra liquid. I didn't put measurements up top because I don't measure at all, I just throw it all in! I would say approximately 1/2 cup of frozen fruit, 1 acai pack, 1/2 of my banana, 2 tbs flax, 1 tbs chia, and 1/4-1/3 cup milk, depending on how thick you like it.
Once blended, pour into a bowl, and get to the best part, topping! I like to go heavy on everything. My favorites are sliced strawberries, blueberries, the other half of my banana, granola, flax seed meal, chia seeds, and unsweetened coconut. And don't forget the drizzle of honey on the top!
It's the yummiest summertime treat, you'll feel like you've hit up the frozen yogurt bar when really you're filling up your belly with great for you nutrition!
