The BEST No Bake Cherry Cheesecake!

 Good morning, sweet friends! I hope you had the most fantastic weekend! We played in the snow, and I went completely stir crazy from being stuck inside. The snow sure is gorgeous, but when you get a couple feet of it overnight, it doesn't make for great driving conditions! I did, however, watch all of the first season of "Once Upon a Time" and Jake and I totally love it! We spent the weekend as couch potatoes because of the snow, but it was sort of nice to do nothing but relax for once.



Oh, who is that you may ask...WELL! That is our Beagle, Axl. :) Axl Rose....BAHAHAAHAH. He is pretty much the cutest pup ever, and although I was desperately against getting a dog, I am so happy we have him now to make our duo a trio. I'll be sure to keep you updated with ways to keep dog crap organized (not actual crap...stuff...okay maybe I should of just used another word).

If you follow me on instagram, you saw the pictures last weekend of the DIVINE personal Cherry Cheesecakes I made for Thanksgiving. I kid you not, this is easily the best thing I've ever tasted. I could eat an entire tray and not even feel guilty. With only 5 ingredients, and NO baking...these are sure to be a hit at any party you bring 'em to. (and if you bring these ALONG with booze...you basically win the award of best house guest ever of all time).




To make these you will only need 5 ingredients (Yes! Five!)

At the grocery store pick up:

-Honey Graham Crackers
-1 stick of Butter
-2 blocks of Cream Cheese
-1 large (13 oz) container of Marshmallow Fluff
- Cherry Pie Filling

That's it! Can you believe it? Wait till you taste them. To prepare, you will also need a muffin tin, as well as some cupcake liners. (I prefer the tinfoil ones that have parchment paper inside)

So, my prep pictures are lacking. You know how Thanksgiving prep goes. It's absolutely bananas! So I only have a picture here and a picture there, but this process is a no brainer so you will totally catch on.


First, let your cream cheese come to room temperature, and whip the cream cheese and marshmallow fluff together until combined. It helps to use a hand mixer/stand mixer for this process...however, I don't have either so I just got my fingers in there and mixed it well. (Don't worry, I washed them first :) )


After you've combined your cheesecake mixture, put it in a plastic bag and set aside. (You will use the bag to pipe the filling into the muffin tins)

Next, you need to pulverize the crap out of your graham crackers. I also don't own a food processor, so if you do, this part will be even easier. Just smash/process your grahams until you have a fine crumb, and combine with 1 stick of melted butter. (I didn't say these were low calorie!)


Put a tablespoon or so  of the mixture in all 12 of your muffin tins. (I think I forgot to tell you that this makes 12...i'm terrible with recipes)


This step is optional, but its important to make sure your crust is PACKED down tight, so I wrapped some plastic wrap around my bottle of honey and just smashed it in the tins to make sure everything is packed tight.


Snip the corner of your plastic bag, and pipe the mixture into the tins. A little more than 3/4ths of the way up so you have room for cherries :)





Scoop some of your cherry pie filling on top of the cheesecakes, and refrigerate preferably overnight, but at least 4 hours. Its important to let the cheesecakes firm up again.


The next day you should be able to take them out of the tins without any problem as they should be completely firmed up.

Now you just need to devour one before Christmas Dinner-



and two after :)
